$19.00

Light Roast • Vibrant • Fruit-Forward

Tasting Notes
Berries • Honey • Candied Lemon

Overview
This is a modern coffee for the adventurous, or curious type. It’s one of those coffees that reminds you why naturally processed lots get so much love. Our Nicaragua La Bastilla comes in vibrant, bright, and unapologetically lively, with berry sweetness, delicate honey, and a subtle citrus pop that lands right between refreshing and exciting.

Roasted light to let all that shine through. If you love coffees that feel energetic and fruit-forward without losing balance, this one’s your ticket.

The Story
Sourced from La Bastilla Coffee Estates in Jinotega, Nicaragua—an estate known for meticulous natural processing, rainforest-rich biodiversity, and volcanic soil that gives these cherries their depth. The farm’s team hand-selects only the ripest fruit and dries the cherries whole, slowly and carefully, to build that signature berry character and a clean, bright sweetness.

The result? A cup that feels sun-kissed, joyful, and just a little bit wild.

Why We Chose It
Because sometimes you want a coffee that wakes up your palate and makes you think, “Wow, that was fun.”
La Bastilla is that coffee. It’s a fantastic example of the unique flavors a coffee bring to your cup based on where it’s from, how it was processed, and how it was roasted. This offering is exciting and playful, and it’s a perfect showcase of what Nicaraguan naturals can do.

Roast Level
Light — preserving maximum clarity, fruit character, and that sparkling lemon-candy snap.

Great For
• Pour overs
• AeroPress
• Filter coffee
• A “modern” Espresso
• Your friend who says they “don’t usually like naturals,” then immediately asks for another cup

About Bibs LTOs
Our Limited Time Offerings (LTOs) highlight small-batch coffees we may only get once. Because of seasonality, unique processing methods, or the limited availability of standout lots (often 87+ scoring coffees), we can only source a finite amount — and sometimes there’s no guarantee we’ll be able to purchase them again.

Every LTO comes in a transparent 250g bag – part practicality, part peacocking, peak Bibs.
